Make Ahead
Prepare pasta dough through Step 1; wrap in plastic wrap. Place in an airtight container and freeze up to 3 months. Thaw dough completely in refrigerator; continue with Step 2.

¾ cup all-purpose flour or “00” flour (100g) ¾ cup semolina flour (durum wheat) (100g) ½ teaspoon salt (5g) ⅓ cup sourdough discard (100g) 1 egg 1 egg yolk 1 tablespoon extra-virgin olive oil (10g) ⅓ cup butter, cut up 1 clove garlic, minced ¼ cup chopped fresh basil, chives, and/or flat-leaf parsley Freshly ground black pepper 2 tablespoon grated Parmesan
Tips
If using a pasta machine, divide dough into 3 portions. Pass each portion through machine according to the manufacturer’s directions until 1/16 inch thick, dusting dough with flour as needed. Let stand; cut as desired.
